Suji Halwa

Ingredients

  • 1 cup semolina (sooji or bombay rava)

  • ½ cup sugar

  • 2 tablespoons ghee

  • 2½ cups water

  • 4–5 cashews

  • 4–5 raisins

  • ½ teaspoon cardamom powder

Method

  1. Heat ghee in a pan and fry cashews and raisins. Remove and keep aside.

  2. In the same pan, roast the sooji on low heat until it smells fragrant and turns lightly golden.

  3. Carefully add hot water while stirring continuously.

  4. Cook until the sooji absorbs the water and becomes soft.

  5. Add sugar and cardamom powder.

  6. Mix well and cook for another 2–3 minutes.

  7. Garnish with cashews and raisins

Besan Ladoo

Ingredients

  • 1 cup besan (gram flour)

  • ½ cup powdered sugar

  • ⅓ cup ghee, approximately

  • ½ teaspoon cardamom powder

  • 2 tablespoons chopped nuts, optional

Method

  1. Heat ghee in a heavy pan.

  2. Add besan and roast on low heat, stirring continuously.

  3. Continue roasting until the raw smell disappears and the flour becomes aromatic. This may take 15–20 minutes.

  4. Allow the mixture to cool until it is warm, not hot.

  5. Add powdered sugar, cardamom powder, and nuts.

  6. Mix well and shape into small round ladoos.

  7. Allow them to set before serving.
